Raw Vegan Matcha Cacao Tart

(Yes, seriously. This is a thing!)

Ingredients:

For the base:

For the filling:

Equipment:

  • Silicone cupcake moulds or paper ones
  • High speed blender (I use a Vitamix)

Instructions:

For the base:

  • Blend the almonds and dates (don’t forget to de-pit them!) for 2-5 minutes in your blender. This mixture may seem dry or chunky, this is perfect.
  • Mould small handfuls at the bottom of the cupcake moulds.

For the filling:

  • Blend all the filling ingredients in your blender. You will need to add some water. When completely smooth, after 3-6 minutes of blending, pour on top of the base in the cupcake moulds.
  • Freeze for 2-3 hours minimum or ideally overnight.
  • That’s it! Sprinkle with some cacao nibs and enjoy!
